The restaurant serves contemporary Russian cuisine inspired by the nature of central Russia. Chef Dmitry Dmitrienko selects ingredients from local farmers in the Nizhny Novgorod region. Starters include duck liver pâté and veal cheek kholodets. Meat and fish are cooked over charcoal, and okroshka is made with birch kvass. Head sommelier Victoria Markevich selects Yale's wines.
