"Myasnaya Karta": a Local Restaurant with Regional Ingredients.

"Myasnaya Karta" ("The Meat List") is a restaurant by Mikhail Petukhov, devoted to meat in every possible variation. The concept rests on regional ingredients: marbled beef from Voronezh, lamb from Cherkessia, mutton from Dagestan, farm poultry, and game. The restaurant uses a wood-fired oven, a grill, and a smoker, giving the dishes a rich flavor.
The menu is organized by cooking technique. From the smoker: brisket with bourbon-pickled cucumbers, beef and pork ribs, half a duck for two. From the oven: pizza on a long-fermented dough, flounder with herbs, and a lamb shoulder for a group. Off the grill: steaks, lyulya kebabs, shashlik, and burgers. Pelmeni and vareniki, hand-shaped in the open kitchen, round out the meat menu.

Chef Dmitry Zonov combines classic recipes with signature touches. On the menu, you'll find moose carpaccio with capers, veal tongue with tonnato sauce and fried anchovies, borscht with a smoked rib. The steak blends venison and moose meat, creating an unusual flavor.
Special attention goes to the dessert menu, handled by pastry chef Alexander Batishchev. The display case holds classic tarts, tiramisu, the "Polyot" cake, éclairs, tartlets, and homemade cookies. The wine list comes in two sections: Russian labels for fans of local wineries, and an Old World collection.
The interior was designed by studio Krivtsova&Redina. The restaurant has four rooms with thoughtful zoning, done in warm tones. The space is designed so as not to distract from what matters most — the atmosphere and the food.

Besides the main menu, the restaurant also runs a meat shop, where you can buy farm delicacies, spices, sauces, semi-prepared items, and steaks with no restaurant markup. "Myasnaya Karta" is a spot for lovers of meat, a cozy interior, and attentive service in the city center.
