Amber offers the summer Shun menu with cold starters, desserts, and tea cocktails

Japanese restaurant Amber has unveiled a new special menu called Shun, entirely focused on seasonal ingredients and purity of flavor. The menu is inspired by the Japanese philosophy of savoring the moment and offers guests a harmonious mix of cold starters, desserts, and drinks. Every dish is created with an eye to texture, flavor balance, and modern presentation techniques, conveying the subtlety of Japanese gastronomic culture and the seasonal shades of its ingredients.

In the cold starters section, guests can try Kinmedai sushi, where delicate fish from Japan's coastal waters is served with yuzu kosho paste, pickled wasabi stem, and Maldon salt. Tuna tataki is lightly seared slices of sekami tuna on a cilantro sauce with an onion dressing, rounded out with crispy takuan and chive. Marinated artichoke with cauliflower and truffle combines fresh artichoke in yuzu and truffle oil with lime juice, blanched cauliflower, and grated truffle, creating a balanced mix of aromas and textures.

The dessert side of Shun continues the concept of balance. A light meringue with coconut mousse and goji berries pairs harmoniously with a Japanese pear and osmanthus mousse, rounded out with a pu-erh tea sauce. Seasonal wild-strawberry mochi underscores freshness and closes out the gastronomic journey. Every sweet dish keeps to the principle of lightness, combining varied textures with deep flavor notes.

The updated drinks list offers tea cocktails and refreshing options: Longjing Cold Brew Tea with taohua flowers and peach, brewed on ice using the Japanese "koridashi" method, plus a kombucha based on Japanese sencha with elderberries and kaffir lime citrus notes. Rounding out the dinner is Dewatsuru Junmai Daiginjo Hihaku Kimoto — the first sake noted by Wine Spectator as "outstanding," with a complex flavor, high purity, and a long finish, produced using the traditional Kimoto method.
