SUBSTANCE Opens on Krasnokazarmennaya.

Daily bistro SUBSTANCE, where billiards become part of everyday life and food becomes a language of connection, is preparing to open on Krasnokazarmennaya Street. The venue is designed as a place equally suited to meeting friends, coming for lunch with coworkers, or closing out the work week with a game of pool. The official opening is set for August 30; for now the bistro is running in test mode.

The interior was designed by the KIDZ Studio team, known for its city café and pop-up space projects. They chose a style inspired by the atmosphere of the 1960s and rounded it out with modern details. The décor features a lot of wood and deep tones, and unexpected elements like the light fixtures and mezzanines create rhythm. The furniture and lighting were made to individual sketches, including a billiard table that will double as a dining table by day and a game table by night. The space spans two floors and a veranda, holding roughly a hundred guests.

The menu was developed by chef Roman Grebenchuk, who previously worked at well-known Moscow projects. It's built on comfort food, where familiar dishes get a new presentation. The menu will feature meatballs with mashed potatoes, schnitzel with potatoes, a mackerel gratin with rillettes, a shepherd's pie shaped like a Wellington, and a pulled-beef sandwich. Among the desserts: a lemon-lime sponge cake with cream and curd. The menu is structured into six sections: starters, soups, salads, mains, desserts, and sandwiches. The breakfast block will include curd fritters with berries, a French omelet with langoustines, buckwheat with parmesan, and other dishes with an emphasis on sauces.

The bar menu was put together by Roman Budin, known for his work at Madame Roche and Mr. Pinky. He gathered cocktails built on the classics and his own signature vision. It includes Calamansi with passion fruit and vanilla, Flower with elderberry and rhubarb, and the signature Substance cocktail on gin and green apple, which will become the venue's calling card.

The team plans to develop the bistro as an open urban space. In the future, it will host art and sports events, parties with local DJs, morning runs and coffee rides, billiard tournaments, seasonal menu updates, and special weekend breakfasts. SUBSTANCE is conceived as a place that brings together different urban communities and builds a lively atmosphere around itself.
