Japanese ramen bar RA'MEN has fully refreshed its menu for the May holidays. The project's brand chef reworked the roll list and added starters, salads, and new bowls. Kimchi olives with yuzu and sesame have joined the starters section. Among the appetizers, you can now try salmon sashimi with truffle oil and tuna zuke with yuzu sauce. Fries now come with a choice of seasoning: salt, nori, or truffle oil. The update also brought crispy panko shrimp with spicy sauce, fried calamari with yuzu aioli, and spring rolls with salmon and mozzarella.

Two new options have joined the salad category. The first is a twist on the classic Niçoise, with tuna zuke, a marinated egg, and mini potatoes. The second is a duck breast salad with mango and hoisin sauce. Among the mains, worth noting is the updated "Carefree Vegan" ramen: it's now made with coconut milk and rounded out with a plant-based chili con carne with edamame beans. Among the noodle bowls: a veg wok with sesame-oil-fried noodles, tofu, and shiitake chips, and a mazemen with seared salmon and a marinated yolk. Fans of fresh combinations are offered a poke with tuna, avocado, sunomono cucumbers, and edamame.

The roll section grew by six new items at once. Among them: a spicy beef tartare roll with marbled beef, a triangular roll with tempura shrimp, and a vegan miso eggplant roll with a mushroom mix, avocado, and cashew cheese. The menu also got a spicy tuna roll, a salmon-avocado roll with salmon tartare, and a roll with eel and seared salmon. For those who like variety, there are sets: "salmon," with sushi, gunkan, and a Philadelphia roll, and "hit," with eel, spicy tuna, beef tartare, and Philadelphia.

A special addition has joined the dessert section — Pochita, a dark-chocolate mousse with dried apricot and almond petals, shaped like the cute demon from anime "Chainsaw Man." The bar menu grew too, with three anime-referencing cocktails. Subject 8, made with herbs and butterfly pea tea, is scented with a cherry perfume, inspired by anime "Spy x Family." Soul King, with coconut milk and kiwi, is dedicated to a character from "One Piece" and served with a frozen devil fruit. Funbari Onsen, with gin, pineapple, and yuzu, is decorated with a sugar stamp featuring characters from "Shaman King."

Among the non-alcoholic newcomers: a banana-lychee lemonade and a mango-pineapple lassi. The iced tea section got passion fruit-banana and tropical guava-mango-banana flavors. Matcha fans are offered an iced matcha peach cheesecake on cheese-vanilla milk. Among the coffee drinks: an iced chocolate-hazelnut latte with banana milk. The new spring menu has been in effect at every RA'MEN location since April 24.
