Rooted heart and soul in Italian tradition, Emanuele Pollini, a native of Romagna and chef at several Michelin restaurants, is opening Oltremare as brand chef. The menu features traditional dishes whose recipes the team gathered over years, from Sicily to the Adriatic coast. Quality, exclusive ingredients and classic cooking techniques come together with a worldly outlook and the experience of gastronomy's great masters.

The bar menu by head bartender Maxim Gorelik and bar manager Dmitry Rybolovlev is inspired by a journey across Northern Italy: the Magenta, on pisco with hibiscus; the Novara, on grappa with cornel cherry soda; the dessert-style Mede, on spiced rum. The wine list, by brand sommelier Dmitry Kipelkin and sommelier Maria Syukrina, offers a range of styles from the landmark wine communes of Italy and France.

The interior by studio Sundukovy Sisters (S+S) brings elegance and flowing lines, done in warm, tactile materials: a pewter kitchen counter, a wine room in dark wood. The second floor holds an intimate space with vivid European details and separate rooms. Among the artworks are pieces by Russian artists from contemporary art gallery scena/szena — Kirill Garshin, Akhmat Bikanov, and Nikolai Bakharev.
