CuttaCutta bar manager Ivan Panyushkin, recently named among Russia's top bartenders at the "Best in the Industry" awards, has updated the cocktail list. Rich, vivid flavors mark the shift toward winter, while the stories draw on the legends of Australia's Jawoyn lands.
The light, aperitif-style Alcheringa spritz, with sauvignon blanc, pear liqueur, and peach, is as fleeting as the Dreamtime. The ancient god Barraya lent his name to a tequila cocktail with lychee water and exotic guanabana, served with a white chocolate candy with a raspberry filling. And the mythological age of creation, or Dreamtime — the starting point of Aboriginal Australian mythology — rings out in new harmony in the cocktail of the same name, made from vodka, elderberry liqueur, sherry, and birch water on sagan-dailya. The signature collection also has room for an unusual mulled wine with plane tree leaf liqueur, Martini Fiero, aloe honey and kaffir lime; a Virgin porn star on non-alcoholic rum with mandarin, pineapple, and tonka beans; and a digestif sour on sherry brandy with apricot liqueur.
