

"Charlie's" bistro&champagne has started a new tradition — closing out every month with rare champagne releases. From April 24 to 26, they'll be pouring Dom Pérignon from three vintages at once — 2006, 2010, and 2013. Every evening, brand sommelier Sarmat Gabaraev will talk about the wine and offer it by the glass.

These three evenings give a chance to see different sides of the famous Dom Pérignon house. Made only in exceptional vintage years, the champagne expresses the character of the season, the brand's style, and its philosophy of aging. At "Charlie's" near Patriarch's Ponds, you'll be able to feel each year's terroir individually, in every detail of aroma and flavor.
The 2006 vintage offers shades of ripe apricot and peach with floral accents. Balanced acidity pairs with bready and chocolate notes on the finish. The 2010 harvest turned out to be a difficult one: cold seasons, rain, a hard picking season. So citrus, green apple, and almond dominate the aroma, while the flavor combines high acidity with honeyed shades. The year 2013 brought a wine full of contrasts: pear, melon, and notes of pine and wood come through in the aroma, and the flavor palette turned out dense, with fruity and spicy accents.

To play up the character of each champagne, brand chef Nikita Rendino has prepared a special pairing menu. Alongside the glasses comes a Gambero Rosso shrimp crudo with a salted-tomato-and-ponzu sauce. Also on the starters list: French gougères — choux buns with pecorino cheese, a morel cream, and the finest shavings of truffle. These dishes help the champagne's flavor open up and make the tasting experience even fuller.
