

The Valiko chain, known for its attention to quality and respect for the craft of baking, has celebrated the opening of its tenth bakery. The new location started operating on June 6 and sits inside one of the largest food malls outside Moscow — BAZAAR Food Hall & Market. The venue's format differs from the others: Valiko is now presented not just as a place to buy baked goods but as a full-fledged café. Drinks, desserts, and fresh pastries are served here, and visitors can spend time at the tables. The new location's hours: 10 a.m. to 10 p.m. daily.

The chain's main product is artisan bread, made by hand from simple, natural ingredients. Production uses no industrial yeast or artificial improvers. The dough is kneaded fresh every day on a sourdough starter, following a strict recipe. This approach makes the bread's flavor recognizable and its quality consistent. Besides bread, the bakery shelves always have fresh sweet buns, signature desserts, and coffee from the founders' own brand, gt.coffee, run by the same team: Galaktion and Elina Tabidze.

The bakery's name is a personal family story. Valiko was the name of Galaktion Tabidze's grandfather, who baked bread himself his whole life. That explains the respectful attitude toward the craft, the product, and baking traditions. Since the first bakery opened, the chain has stayed true to these principles. They're reflected in the new location at BAZAAR Food Hall & Market too, where you can now not just buy bread to take home but spend time with a cup of coffee and a dessert, café-style.
