Reborn: A New Meat Restaurant by DuoBand.

Reborn is a new meat restaurant by the DuoBand team, opening in January 2025 at 11 Dobrolyubova Street. The venue occupies the space that previously housed restaurant Recolte, and offers guests a free-form take on meat gastronomy. Reborn isn't tied to any single cuisine — classic and contemporary come together here, using French, Asian, and Russian techniques, but with no strict boundaries.

The whole concept of Reborn rests on just one restriction: the meat always has to be of outstanding quality. That shows in the menu, where the largest section is devoted to beef. On offer here: classic steaks, tartare with Worcestershire, ceviche marinated for a full day in Chinese spices, beef bourguignon, and ravioli with braised beef cheek, Parma ham, and a smoked-plum sauce. Among the poultry dishes: quail with bacon, foie gras with amaretto and coffee butter. Reborn has sections devoted to pork, lamb, and rabbit — rabbit, for instance, goes into cabbage rolls with porcini. Besides the meat dishes, the menu also has vegetable items and a small amount of seafood.

Chef Andrey Kovalyov, who previously worked at "Tartarbar," runs the kitchen. Pastry chef Stas Paul, a winner of St. Petersburg restaurant competitions, handles the desserts. One of the most talked-about new items could well be his chocolate brownie with smoked seaweed and red caviar.

The name Reborn translates as "rebirth" and symbolizes a new chapter for the space on the second floor above restaurant Harvest. Unlike the previous Recolte, Reborn offers an open kitchen where chef's table dinners will be held, more greenery in the interior, and a less formal atmosphere. On weekends, the restaurant will prepare Peking duck and a traditional Wellington. The bar menu brings together wine and cocktails, and DuoBand's signature style guarantees quality service, both in the kitchen and out on the floor.
