The kitchen centres on live fire: charcoal, a wood-fired oven and hours of slow cooking set the pace. Maya combines Peruvian and Argentinian cooking techniques. Lamb leg is roasted on a metal cross, and ceviche follows the Peruvian style. The menu includes a raw section, wood-fired flatbreads, steaks and sides.
