Spring Desserts at "Kofemania".

Since late April, every restaurant in the "Kofemania" chain has started selling new spring desserts. The main new arrivals appeared on the menu on April 29, and the kids' dessert "Chucha" followed on May 3, available only on weekends and holidays. The collection consists of four sweet items, each different in composition and presentation.

"Paladin" recalls a classic lemon tart, but done with a slight lean toward contemporary pastry aesthetics. Its base is a shortcrust tartlet filled with lemon custard cream, topped with lime jelly and a tall meringue whipped to stiff peaks. This dessert will suit anyone who loves citrus tartness and light sweetness in one bite.

The "Camellia" tartlet is shaped to look like an open flower. It's filled with an almond-and-orange cream, hiding a rhubarb compote underneath. Fresh strawberry pieces and a delicate meringue are added on top. The flavor composition is made as light and fresh as possible, like a spring day, and will suit anyone who prefers fruit-based desserts.

"Berry Berry" is another dessert with an emphasis on fresh berries. The little basket hides a strawberry coulis, a lemon-and-orange confiture, and a layer of vanilla mousse. The finishing touch: a generous portion of fresh wild strawberries. This dessert is most often ordered with coffee — it's light and not overly sweet.

"Chucha" is a puppy-shaped dessert made especially for kids. It's not in the display case every day — only on holidays and weekends. Inside: a chocolate-caramel mousse, a crunchy hazelnut layer, and a chocolate crème brûlée. It looks like a toy, but the flavor is that of a real dessert, put together with attention to detail and texture.
