The cuisine is built on Russian classics — fish, game, grains and fermented preserves — with every dish reassembled anew. The menu at Course features forshmak and pickles, pirogi and blini, pelmeni and vareniki. Mains include Pozharsky cutlets and braised beef ribs. Soups include borscht and ukha of salmon and zander. Caviar always comes with blini. Mornings bring breakfast with draniki and syrniki. Our restaurant guide recommends trying the Borscht with braised veal cheek and the Pozharsky cutlets with mashed potatoes.
