The cuisine at POOOL is dacha-style gastronomy reimagined for today by Vladimir Chistyakov and Alexander Melnikov. Starters include sea bass tartare and scallop with green chili, while a separate caviar bar serves chicken strips and black caviar. Among the pasta dishes is spaghetti with truffle, and the hot dishes include grilled chicken and baked sea bass. Mornings bring fried eggs with green salad and the Chistyakov bun, and dessert is panna cotta with champagne jelly.
