Restaurant Padron has unveiled a new summer menu focused on seafood and the cuisine of the Iberian Peninsula. The foundation now includes not just Spanish and Portuguese recipes but fresh interpretations using ingredients typical of the region: sherry, cider, olive oil, and crab. The menu has grown noticeably wider — 13 new dishes, almost every one connected to the sea.

The starters section has gained a dry-aged tuna preparation, rare for Moscow, served with leche de tigre sauce. This sharply acidic sauce brings out the texture of the aged fish. Yellowtail crudo is rounded out with Spanish cider and pieces of fresh apple to balance the fattiness. Argentine shrimp carpaccio is served with passion-fruit oil and fennel. Even the oysters here are unusual — sherry vinegar replaces the classic wine vinegar, and the crab salad's almond dressing gets notes of vinho verde wine. This approach unites tradition and innovation, making Padron's kitchen nearly one of a kind.

Among the hot dishes, worth noting is arroz with saffron, shrimp, and sea bass fillet — a complex, layered dish, with correctly cooked rice, juicy fish, and a creamy, spicy flavor. Reminiscent of classic Catalan cuisine, this variation rivals Arroz a la llauna, but with a more delicate presentation. Summer gazpacho with claw-meat crab is another menu favorite — not just a cold soup, but a vivid tomato-and-vegetable mix with deep flavor, set off by the sweetness of the crab meat.

The sides on the new menu look simple but are considered down to the smallest detail. Grilled asparagus is seasoned with organic Spanish oil the restaurant imports directly. Mashed potatoes are served with a quail egg yolk and a drop of garlic sauce — rich, smooth, fragrant. The everyday potato-onion-and-egg tortilla has gained three new versions: with jamón, black caviar, and anchovies from northern Spain. All the options can be chosen to taste.

The menu feels like an invitation to travel across Spain and Portugal without leaving the city. Sea aromas, clean flavors, and well-judged combinations make Padron's new lineup interesting not just for fans of Iberian cuisine, but for anyone who simply wants to try something fresh and unusual.
