Summer Dishes with Chanterelles at BURO. TSUM.

BURO. TSUM has a seasonal menu fully devoted to summer gastronomic trends. It was put together by brand chef Yegor Makarov, known for his attention to detail and his desire to make even a familiar dish feel fashionable. The central ingredient is chanterelles — mushrooms that show up everywhere in summer, wherever there's a hint of seasonality. On this menu they're paired with ingredients they wouldn't usually have anything to do with, and only benefit from it: every flavor comes across in a new way.

Among the new dishes, a signature take on the classic surf & turf stands out. The familiar meat-and-seafood combination is rethought here: Sakhalin scallop and chanterelles meet on the plate. Two ingredients utterly different in origin — sea and forest — unexpectedly form a cohesive, layered combination. The scallop, with its dense texture and sweetness, contrasts with the mushrooms but doesn't fight them. Together they create an interesting flavor dialogue worth returning to.

Mushrooms and potatoes are a classic that BURO. TSUM decided to offer in two versions at once. The first: home-style and cozy — fried potatoes with chanterelles, onion, and parsley. The second: restaurant-refined — a potato gratin made with parmesan and truffle, in a creamy beurre blanc sauce. These dishes feel familiar, but are played with in a way that stirs both memory and a light surprise.

Pasta lovers should stop by during the day — lunch brings a homemade version with chanterelles, cream sauce, and truffle oil. It's a warm, rich dish in which the mushroom flavor is amplified by the creamy texture and truffle aroma. And if you're after something lighter, try the grilled chicken. It's served with baby potatoes, kale, and an onion broth — together forming a balanced, health-conscious dish without sacrificing anything to the diet.

All of this is served on the veranda, at the relaxed pace of the city center. Tables under the open sky, a glass of rosé, and the freedom to swap lunch and dinner — every detail works toward the atmosphere of an unhurried summer. Even if you stopped by for an hour, you'll want to stay longer — if only to try the second chanterelle version too.
