

On September 11, restaurant BURO. TSUM will host a gastronomic dinner as part of Alfa Only GreatList Sessions, a large-scale touring series organized by international guide GreatList. That evening in Moscow, legendary Italian brand Signor Sassi will perform — known for its forty-year history and a distinct style combining simplicity, refinement, and attention to detail.
The venue first appeared in London's Knightsbridge district and quickly became one of the most notable Italian restaurants outside Italy. Royalty, politicians, entrepreneurs, and world-class artists have dined here. Among its guests have been Rihanna, Lionel Richie, and Tom Jones. The brand later appeared in Dubai too, on Palm Jumeirah island, at the St. Regis Gardens complex. The new restaurant continued the tradition, offering a combination of Italian cuisine and modern Eastern luxury.
In Moscow, Signor Sassi will be represented by chef Luca Rossi, a native of Campania who started out in Venice and worked for nearly ten years at restaurant Cipriani in Monte Carlo. His partner for the evening will be BURO. TSUM brand chef Yegor Makarov. Together they'll create a menu where classic flavors meet original interpretations and bold combinations.
The dinner opens with the dish that's become Signor Sassi's symbol — wild sea bass carpaccio. Cold-pressed olive oil, lemon, herbs, and capers bring out the fish's flavor. Continuing the meal, Yegor Makarov offers his own take in itameshi style — wagyu beef carpaccio with wasabi sauce, plus a vitello tonnato that recalls Japanese okonomiyaki.
Luca Rossi's main course is calamarata with seafood in tomato sauce, and grilled octopus with celery cream. The BURO. TSUM chef, in his honor, prepares filet Rossini, rounded out with truffle consommé. The evening closes with two desserts: classic Sicilian-rooted cannoli and a pistachio tiramisu, letting guests try different versions of the Italian sweet tradition.
This event will be more than a meeting of two chefs — it's a dialogue of cultural codes, from strict Italian classics to a modern play with ingredients. BURO. TSUM's guests will get to see how different culinary perspectives come together harmoniously in a single dinner.
