Another resident of Bolshaya Nikitskaya — a project by the culinary trio Pinsky, Istomin, Losev.
The restaurant's concept is built around fire — the open kitchen holds the only 9-meter oven in Russia.
There are nods to primal cooking methods too: a spit, a smokehouse, a grill, a mangal, an oven for pies and bread, and an oven for slow-cooking. Meat is prepared in every possible way, from meatballs and kebabs to shawarma and steaks.
Rounding it out is a wine list by head sommelier Ekaterina Kudryavtseva, focused on Bordeaux, Sangiovese and Nebbiolo. The interior by Irina Glik (CuttaCutta, Loona, Narnia) carries the concept forward: soaring phantom maidens on the ceiling recall smoldering lava, and warm wood pairs beautifully with the gray walls and floor. Rounding out the interior: brutalist bell-shaped shades in reinforced steel, wall panels and lamps.
