Dragon

Dragon is a project with open pan-Asian cuisine, owned by Alexander Oganezov. The cooking here follows the shu-ha-ri principle: the classics form the base, but chef Ruslan Polyakov adds creativity and experimentation.

Vitaly's original list features eight drinks.

The interior design is entirely the work of Gosha Aygunyan. Overall, Dragon is done in a minimalist style: high glass ceilings and walls, rounded furniture shapes, natural tones. Many pieces are made from natural materials like wood and stone. Ikebana-style arrangements sit on the tables. More rigid, complex elements add a touch of urban edge.

Dragon's kitchen puts a strong emphasis on seafood. The most popular dishes include scallops with truffle, salmon misoyaki, and octopus crudo. There's also soup, pasta bolognese and Peking duck on the menu. The bar is led by Vitaly Skripchinsky, who has managed to bring together popular Asian spirits with rarer finds. Order Chinese whisky, Singaporean gin or seasonal drinks here — all part of the "Long" category, from Okinawa Shiso on shiso gin with plum liqueur to Japanese Pear on sesame gin.
