

The countryside resort Maitri in the Leningrad region has set its second "Dinner on the Sand" for July 25. The June gathering set the format: a shared table by the water, the surf of the Gulf of Finland as a backdrop, attentive service, and a gastronomic program built for an unhurried evening on the shore.

The philosophy of the evening rests on three principles: long smoking, open fire, and seasonal local produce. The starters include fresh and grilled vegetables, smoked salmon rillettes with crispy tartine, and duck pastrami — marinated for about a week, smoked in the smoker, and served with a pear dressing. The main program unfolds over four courses. First comes whole smoked salmon with romaine leaves charred on the grill and dressed with a citrus sauce. Then come marbled beef kalbi ribs: cooked at 110–120 degrees for ten to twelve hours with a signature spice mix and served with an airy celery purée. The dinner closes with a set of farmhouse cheeses with homemade jams and honey, and the final note is a "Tres Leches" dessert with a refreshing mint chiffonade.
The duck marinates for about seven days, then goes through the smoker — that's the logic of the whole menu: time as the main ingredient.
Zhenya Litvyak — a Saint Petersburg wine expert and member of the Friendly Family creative collective — will handle the evening's music, playing an exclusive vinyl set. The wine program is put together by Simple, and every guest will receive a gift from the brand L'Occitane. The number of seats is limited by the single shared-table format. A ticket for the gastronomic part without alcohol is priced at 9,500 ₽, with a Simple wine pairing at 3,500 ₽. A round-trip transfer from Begovaya metro station is available for 1,000 ₽.
After dinner, the evening can be extended on the resort grounds: designer tents and separate cabins with views of the Gulf of Finland are available for overnight stays. This scenario preserves the format's main idea — bringing together a large shared table, the water, and an unhurried countryside pace.
