Cazaban Bistro

Behind the project is the French family Cazaban, who run the biodynamic winery Domaine de Cazaban, operate several venues in Toulouse, and supply homemade delicacies across France. In Moscow, that experience is concentrated in a single address on Serpukhovskaya Square, where a shop, a bakery and a bistro sit side by side. The project was opened by restaurateur Michel Del Bourg and Alexandra Ponomareva, with brand chef Viktor Kagin running the kitchen.

The bakery is one of the concept's key elements. Here they bake long-fermented sourdough bread and French pastries. Next to it is a shop with jamón ibérico, aged cheeses, sausages and house-made preserves, all available to buy to go or eat on the spot. The idea runs through everything: most of what's served in the bistro is made within the project itself.

The bistro's menu is built around clear city food with a French character. Pastrami on brioche, a braised-cheek pie, a green salad with camembert, tartines and quiches make up the core of the daytime offering. Breakfast is served here in the mornings, and desserts round out the meal. The format is built for everyday visits, without unnecessary formality.

The wine list is built around the wines of Domaine de Cazaban and a few other small producers. Biodynamic wine here isn't just a menu item — it's part of the family's story, the same family that brought the project to Moscow. The bright interior with large windows and calm seating supports the same low-key tone set by the café-and-bakery concept on Serpukhovskaya Square itself.
