Fumisawa is a compact, 30-seat restaurant by A. Novikov, located just a few steps from TSUM on the ground floor of the Berlinsky Dom shopping center. It has become one of Moscow's landmark Japanese-cuisine projects. The name "Fumisawa" comes from the surname of the first chef, who opened it several years ago; the current chef is D. Kondo.
The menu covers a wide range of dishes: try traditional rolls, including ones baked with parmesan, as well as udon with crab or a fried ribeye steak.
You can take a seat at the counter, made from poplar root, and order sushi omakase. This set is put together by Kondo personally for each guest, in keeping with classic Japanese sushi bars — an emphasis on ingredient quality and attentiveness to the guest, without excessive modern reinterpretation.
The interior is done in a minimalist style: the open kitchen is framed by a poplar-root counter, matching tables are set throughout the restaurant, with a stone floor and teak wall and ceiling finishes. Two small private rooms have paintings of koi carp, a symbol of good fortune. Designer I. Glick chose to plaster one wall in the dining room so it resembles the sand of a Japanese rock garden. Bright details, like a bundle of painted bamboo in a tub by the entrance and yukata elements, add lively accents to the calm atmosphere.
