The Berdiev brothers, Alexander Sanzhimitupov and Tatiana Krikunova, focused their restaurant on the one thing that matters most — the food. Birch is named after the tree, yet paradoxically the menu leans toward original Asian cuisine. Thoroughly unfamiliar combinations catch you off guard with the presence of the fifth taste — umami. But what guests come here for above all is the pair of tasting menus by Arslan Berdiev, served chef's-table style.
The designers at the DA architecture bureau were, naturally, inspired by a birch grove when creating the interior.
There's plenty of light wood here, recalling birch bark, alongside stainless steel — a perfect monochrome for culinary immersion.
