Casper

Bistro Casper was founded by chef R. Kiselev together with the restaurateur trio S. Sharma, A. Ber and P. Steinlukht. In building the menu, the founders leaned on their own preferences, which is how classics like a burger and fries ended up on it. They wanted to strike a balance between simple food and the natural flavor of the ingredients, while still bringing their own vision to the dishes.

There are two rooms inside with different moods: the first, with the bar counter, is livelier, while the second, with the open kitchen, has a more intimate, cozy feel.

The interior is by the Roobi architecture bureau, which created a simple space free of excess detail or bold colors.

Casper's menu isn't tied to any single cuisine. It ranges from Italian bruschetta with pickled peppers to French beef tartare. The chef makes heavy use of French sauces in his recipes. Desserts are developed by pastry chef Ya. Kiseleva, the chef's wife, and the menu includes a chocolate cake with a "salt flower," a cream tart, chocolate truffles with blackcurrant liqueur, and other sweets. The wine list, put together by sommelier D. Kondratenko, focuses mainly on French wines without leaning on big-name labels, with particular attention paid to Burgundy. The bar offers classic cocktails such as the Hugo, Basil Smash and Clover Club.
