Reborn is DuoBand's meat-focused gastronomic restaurant on Dobrolyubova in St. Petersburg. Chef Andrei Kovalev builds the menu around live fire, dry-aged steaks and wagyu.
Dark stone, dim lighting and a meat display right in the dining room — this is what a space looks like when fire plays the lead role, not a supporting one. Dry-aging chambers are built into the interior alongside fresh flowers and works by contemporary artists, wooden tables are dressed with snow-white tablecloths, and a dark-stone bar counter with backlit shelves sets the tone for the evening. The open kitchen is separated by a glass partition, letting guests watch the cooking process without breaking their conversation.
Our restaurant guide's team finds Reborn a favorite meat restaurant, with outstanding steaks and tartare.
Chef Andrei Kovalev, well known to St. Petersburg food lovers from Tartarbar, built the menu around live fire and meat quality, without tying it to any single geography. The meat here goes through a full cycle, from aging in the chambers to the final tableside presentation. The chef personally serves the large bone-in steaks right in front of guests. The lineup of cuts spans premium selections, Dry Age pieces, and Japanese wagyu. A separate section is devoted to live fire: yakitori made from marbled beef, tenderloin and tongue, black cod with miso, and juicy hamburgers. Florentine tartare and dry-aged picanha with citrus ponzu round out the picture for anyone looking for more than just a steak.
One guest described the chateaubriand this way: the steak practically melts in the mouth, the doneness is precise, there's plenty of sauce — but the flavor of the meat comes through clearly even without it. The chicken broth with ravioli earned the unexpected label of "the perfect hangover soup," for its richness and flawless technique. The pie with smoked cheek and sour cream comes highly recommended: attractive plating, an even cut, and a sauce that complements rather than overwhelms.
The dessert section is its own story. Executive pastry chef Stas Paul, named Russia's best pastry chef in 2025 by the national restaurant award Where To Eat, works with unexpected pairings: he builds a tarte tatin from eggplant with miso caramel, and serves a Pavlova with roasted bell pepper. The restaurant's concept carries through even to the shape of the dessert dishware — the plates hint at a nod to bone marrow.
Our secret guests gave the dinner 9 out of 10 — for precise fire work, high meat quality, and attentive service with minimal gaps between courses. For The Taste restaurant guide, this is one of St. Petersburg's strongest meat restaurants.
