For the interior, Evgenia Uzhegova's team took a slightly different approach to zoning, underscoring the importance of every part of the project through a light, fresh interior where the main focus falls squarely on food preparation.
The entire Remy Kitchen Bakery concept is built around the ingredient.
"To honor the history of the building, where a bread shop called 'Khleb' opened back in the 1960s, we decided to bring retro touches into the interior. There are Classicon chairs designed by Eileen Gray, the 'hugging' Zanotta pieces by Patricia Urquiola, and sculptural Tom Dixon designs.
The geometry of the sub-tables, furniture, columns and shelving all nods back to the '60s, and on the wall above the bar hangs a painting by Mikhail Chernyshov from 1984," says Evgenia. Every component of the open kitchen is set out in its own separate block — the pizza-oven and cooking zone, the bakery zone, pasta prep, bread, hot and cold dishes: they work together organically, coming together into a unified concept that rethinks the relationship between guest and chef, with the guest seating literally built into the open kitchens that surround it.
