Arkady Novikov's Aist has been around for more than 15 years. In 2021 the decision was made to breathe new life into it: refreshed menu, interior, positioning. From a fully bourgeois restaurant it turned into something lighter, airier, less formal. Chef Mirko Zago brought his own take on European cuisine: a whole crudo section appeared, along with scallops with chestnut and nasturtium, vongole with parsley, and white asparagus.

Highlights of Russian and Japanese cuisine are also on the menu.

Believe it or not, Aist was the first place in Moscow to roast coffee beans right inside the restaurant, and the coffee here is still excellent.
