MAX BEEF FOR MONEY is a meat restaurant by Vladimir Basov and the owners of the Tre Bicchieri wine shops. The dish menu fits on a single page.
The wine list runs to four pages, dominated by organic and biodynamic European wines — 100 labels in total.
The project's chef is D. Finyagin. He uses Angus beef, supplied by the restaurant's own bio-farm near Vsevolozhsk in the Leningrad region. The meat's preparation begins right after slaughter — it's aged for 28 days in a special fermentation chamber, where large cuts mature right in the restaurant's dining room. These chambers sit to the left of the entrance, creating an interesting backdrop for guests seated at nearby tables. For the unprepared viewer, it's certainly a striking sight. Besides wine, the only drinks on offer are water or tea — no juices, coffee or lemonades here.
The interior was created by Ksenia Smirnova, who previously worked with Tre Bicchieri. She designed the murals for the restaurant and the stylish design for the wine bar Big Wine Freaks. The project is marked by a gray-blue color scheme with bright accents. Its main "decoration" is the meat-aging chambers.
